If you already have the source to building a Mac client, it shouldn't be that hard to port it to the iPhone. So how bout it?

So is there any chance of an iPhone port?

I would say unlikely a full-featured port. The iPhone is largely based exclusively on Cocoa and Objective-C, while I would venture a guess that Ventrilo is currently not if only because Obj-C is very much Mac-centric. It's similar to C++ but with syntax differences and a more object-focused approach to handling. Building a small administration interface would be plausible to do from scratch, but a full featured voice chat setup would likely be out of reach for Flag to pull off by himself, especially when the desktop clients are constantly undergoing changes. Ventrilo only seems simple because it's made to be used easily.
