There is some information in the Macintosh Troubleshooting thread:

http://forum.ventrilo.com/showthread.php?t=39590

Changing from GSM to Speex takes all of about 30 seconds, but the change will need to be made by the person responsible for managing your vent server.

On DarkStar LLC, who is who I use to host vent, when I log into my account, I select my server and there is a popup that has two options: Speex or GSM.

I select Speex, click save and that's it.

The next time a Vent client connects it automatically configures itself for Speex.

Over in the server forums, there's a stickied thread with instructions on setting up vent server on Macintosh. One of the posts explains the Speex configuration.

In the ventrilo_srv.ini, there is a VoiceCodec = option where you can plug in which voice codec you want.
