I have just purchased an Imac, and downloaded the mac vent client. I think I am trying to connect to a GSM server, but the d/l'd client only supports speex. Any ideas how I can connect to the GSM server?

Afaik, you can't. A guy in a clan I'm in can't join pub vent(dotaallstars) because it is running a gsm codec. You have to use speex if you want mac clients to connect.

Unless they are running some kind of emulator for windows environment.

*Not 100% sure so don't take my word for fact.

You need to ask the person that administers the server to change the server to speex and restart the server.
