Did you try the OpenGL 'fix' for WoW? It is supposed to correct the 'patchwork' effect a lot of folks are seeing in game, but in my case at least, it significantly improved overall frame rate as well.

Try this

1) Close the WoW application
2) Navigate to your main World of Warcraft folder
3) Open the config.wtf file in your WTF folder using TextEdit
4) Add the following line to the bottom of the file: SET gxapi "OpenGL"
5) Save and Close
6) Restart WoW

Let us know if that makes any difference. One other thought... It's possible the USB Headset you are using is drawing too much power in conjunction with the other USB devices. If the above 'fix' doesn't fix it, can you test your system again with only the headset, keyboard and mouse plugged directly into the Mac? (i.e. unplug all other devices such as printers, external hard drives etc).
